1 pack Spinneys Ready-to-Make Veggies
1 cup couscous
1 can (400g) chickpeas, drained
1/2 cup feta cheese, cubed
1/2 cup cherry tomatoes, halved
2 tbsp fresh herbs (parsley or mint), chopped
2 tbsp toasted pine nuts
Butter from Spinneys Ready-Made Veggies pack
Salt and pepper to taste
1. Cook the couscous according to the packet instructions, using the butter from the Spinneys veggie pack to flavor it.
2. Roast the Spinneys Ready-to-Make Veggies at 200°C for 15 minutes or until tender and golden.
3. In a large bowl, mix the couscous with the roasted veggies, chickpeas, feta cheese, and cherry tomatoes.
4. Add the fresh herbs and toasted pine nuts, then season with salt and pepper.
5. Toss everything together and serve.
